Celebrate May Day with your family on May 1st! May Day is an ancient festival of spring, filled with dancing, singing, and cake to welcome the month of May. I've got a fun and easy recipe for making marshmallow flower cupcakes with colored sugar and sprinkles—perfect for kids of all ages, even the little ones, to help decorate!
Fun Fact: May Day also marks the halfway point between the spring equinox and the summer solstice.

Flower Decorated Cupcakes
Ingredients:
- Colored sprinkles, candies, colored sugar and other edible decorations
- Bag of large or mini marshmallows - We used mini marshmallows because they form leaves easy when you cut them in half
- vanilla frosting - 16-ounce container
- Optional - Green Food coloring or any color for your cupcakes base
- Small clean paint brush
- 24 Yellow or Chocolate cupcakes baked - homemade, from a mix or store-bought
- Kitchen scissors or plastic knives
Get Ready
- Bake your cupcakes and let them cool off - I like to freeze them so they are easy to work with
- Place colored sprinkles, candies, colored sugar and edible decoration in small bowls
- Get a small bowl of water
- Tint the frosting into a green color - optional
- Cut marshmallows so they are in leaves - Spray blades of kitchen scissors or plastic knife with cooking spray / wipe with a little cooking oil. Cut large marshmallow crosswise into 4 slices to form leaves or halves for mini marshmallows.

Assembling the Garden
- Frost your cupcakes - you can use the colored frosting
- Assemble your marshmallow leaves on cupcake and arrange marshmallow petals on top of each cupcake to resemble a flower, pressing the marshmallows into the frosting
- Take finger or small paintbrush and brush water onto leaves lightly so its slightly sticky
- Using fingers or spoon to sprinkle colored sugar or sprinkles onto leaves. They should stick as leaves are slightly moistened
